The Oxbow American Grill Coming to The Township

The Oxbow American Grill is coming to The Township at Colony Park in late fall, bringing wood-fired American cooking, familiar favorites and gracious hospitality to the space formerly occupied by Sombra Mexican Kitchen.
Led by partners Jason Brumm, Director of Culinary, and Jud Heubach, Director of Operations, The Oxbow is being created as a restaurant for both everyday meals and meaningful occasions.
Brumm’s culinary career has taken him from Florida’s Panhandle to Nashville and the mountain communities of Colorado, including leadership roles with Café Thirty-A, WaterColor Inn, Strategic Hospitality and Gravity Haus. Heubach brings 25 years of restaurant operations experience, including leadership roles with Char, Amerigo, Babalu and Table 100.
The restaurant’s name reflects a sense of place rooted in the region’s geography, history and connection to the outdoors. That idea will carry through the menu, interiors and overall experience.
Guests can expect bright salads, creative and classic sides, carefully sourced seafood and vegetables, and high-quality meats prepared over Mississippi red oak. The bar will feature classic cocktails and a curated wine list, while two private dining rooms and a patio will accommodate business gatherings, rehearsal dinners, family celebrations and other events.
Construction is underway, and The Oxbow is expected to open in late fall 2026.
